Dragon Well-First Grade
In the annual search for our highest grade Dragon Well, we follow 3 steps: appearance - looking for consistency in leaf size, shape and coloration; aroma - is it sweet and clean; taste - cup the leaves, release its flavors and hopefully we have found one of China's true gifts of spring. A "famous tea", our "Long Jing" is artisan crafted, offering a robust, natural sweetness with just a hint of underlying astringency. Made with a first-grade leaf, note its consistent "feather-shaped" size and golden-jade appearance, both characteristic of this prized green varietal. The leaf is then hand processed in a wok accentuating its sweet, nutty notes. Lot # S-6.
Why we selected this particular lot: A signature spring tea, we look for a Dragon Well that brings unusual aromas and flavors to the cup. Our source is a small factory that specializes only in Dragon Well production. Their teas are made from a local varietal offering taste qualities we find distinctive in the marketplace. This lot showed a fresh, vibrant taste when cupped - full-bodied, pleasantly vegetal and sweet yet with well-crafted green tea edge. Its aroma is toasty and nutty. This Dragon Well offers an enduring taste.
Interesting facts about our selection: Long Jing tea is known for 4 qualities: its singular shape, jade-like color, toasty-vegetative aromas and naturally sweet flavors. This is small production lot representing one day's harvest. It is grown on a farm outside Hangzhou and processed nearby at a factory that specializes in Dragon Well. Their production is sold only in China. The leaves for this lot were harvested in the second week of April 2016.
Taste profile: It will cup to sweet and nutty liquor with chestnut overtones, while enlivening the palate with just a hint of green tea astringency. Note the mouth feel is sweet and enlivening with some very slight puckering. The aftertaste is sweet.
Brewing suggestions: Use 3 grams for up to 8 ounces of water. Perhaps 4-5 grams with 12 ounces of spring water and certainly filtered if the tap water is treated. We recommend a brief steeping, 1 to 1.5 minutes, to enjoy the subtle qualities of the leaf. Optimum water temperature is between 175 to 195°. The leaves will yield 3 steeps.

High Quality Dragon Well

I received this tea recently (Oct. 2016) and am quite pleased with the quality. This is definitely a very high grade tea with good complexity, clarity of flavor, and even some structure, which I've rarely found even in other high grade teas. It provides a clean cup and plenty of flavor without having to use a lot of leaf or high temperature water, I like to keep it under 175 F. It has a good solid base of dragonwell flavor with lighter, brighter flavors over it that provide interest. I wouldn't characterize the flavor as "sweet" as described above (though I did find a bit more sweetness in the 2nd steep as it cooled), but more complex and somewhat vegetal as is found in some green teas from the Anhui region of China, though perhaps with a bit less astringency. I would highly recommend this tea if you want something special.
