Jade Needle is our featured 2017 offering of a spring green from Yunnan Province. This is an unusual varietal grown at a comparatively high altitude in eastern Jing Dong County, a rich tea-growing area of Simao Prefecture. Note the elegant, smaller side leaf. It is processed using a method that is a cross between white and green teas. This tea offers some of the wonderful flavors of early spring in Yunnan Province!
Why we selected this lot. It is apparent the leaves were expertly processed. Note the small fine hairs on the leaves are intact and add to its nuanced tastes. The leaves are well shaped, uniform and rich in aroma and taste.
Interesting facts about this lot. It is grown at a comparatively high elevation for a green tea harvested early in the spring cycle. It is grown in Simao Prefecture in the Ai Lao mountain range.
Taste profile. A light grassy and vegetal flavor is the initial taste. The elegant leaves also yield hints of sugarcane. Taste is very clean and lingers.
Brewing suggestions. Use a teaspoon of leaf for 8-12 ounces of water. Best water temperature is 185 to 195 degrees F. Steep for 2-3 minutes.
