There is a sense of “fresh” that comes with well-made yellow teas. The leaves are plucked early in the spring harvest, typically a “mao-feng pluck”, showing lush green colors on beautifully shaped leaves. The processing of the leaf includes an added step wherein the tea maker “steams” the leaves before the final firing. The result is Jade Orchid, “Cui Lan”, a tea that Lot # 1.
Why we selected this lot. Our decision to purchase was based primarily on this lots taste. We noted the appearance and shape of the leaves which indicated a well-made tea. The taste of this lot confirm its quality.
Interesting facts about this lot. The leaves are slowly heated in wicker baskets, then covered and allowed to breathe and absorb their natural aromas thereby heightening the fragrance of the leaf. It is grown in the mountain of Anhui Province, elevation of about 900 meters.
Tasting notes. Cups a clear, light golden color, with little or no astringency and naturally sweet side flavors. We taste fresh asparagus coupled with a brisk and clean mouth finish.
Brewing suggestions. Use 3 grams per 8-12 ounces of water at a temperature of 175-185 degrees F. Steep for 2-3 minutes and taste. This can steep longer as it is very slow to turn astringent or get heavy.
