Tongyu Mountain Green (Tongyu Shan Qing)

Grown in the mountains in Fujian Province, this tea was purchased from a small farm just as the harvest was getting underway. Rough in appearance, its leaves are a mix of shapes and sizes and deep green in color with occasional silver markings. It will steep to light fruity notes and a rich yellow–green cup color. Steep this one for roughly 2 to 3 minutes in water temperature of 175–185 degrees.
