Brewing Instructions

Green teas should be prepared between 165 and 185 degrees F, in fresh water and, for the first steep, less than a minute to taste its subtle sweetness. Decant the tea as many green teas become overly astringent. Keep the leaves dry and use them for subsequent infusions.

Our green teas are harvested early in the spring when the taste characteristics are most pronounced and the quality highest. Drinking a high-quality green tea should engage and delight the senses. When brewed properly, our green tea is a real luxury. More than any other tea, these teas offer a freshness, a range of tastes and an uplifting energy not typically found in other teas.

Green tea undergoes the least elaborate processing as they are referred to as “nonfermented” teas. The freshly picked leaves are dried and then heat treated to stop any oxidation. In the manufacture of China’s finest teas, traditional hand making methods are often still used. Tastes range from sweet, buttery, nutty, smoky to grassy and floral depending on the artful handling of the fresh leaves and great attention to the processing of them.

Our teas are primarily bought in Fujian and Anhui Provinces that are well-known for their superior grades. These teas are sourced through local tea dealers, small markets and tea farms that we have purchased from over the years. We also buy high grades of greens in Zhejiang and, selectively, in Guangdong.

Health Benefits: The health benefits of green teas have been well publicized for a number of years. They are reputed to prevent heart disease and osteoporosis; they are great source of antioxidants for combating cancer and fluoride for healthy gums.
