Brewing Instructions
Use a teaspoon or less of leaf. Give the leaves a quick “wake-up” rinse before brewing. Water temperature is best just below boiling or about 195-205 degrees F. The first steep will be short, a minute or less. Infuse the leaves repeatedly until flavor is exhausted.
There are literally hundreds of Oolong teas encompassing a wide variety of leaf styles and colors. Descriptions range from light green to rich red and nearly black, fragrant and floral to notes of honey and roasted sugar. The rich flavor of these semi-oxidized teas results from a painstaking process of tumbling or otherwise bruising the surface of the leaves to develop and release enzymes and then rolling or twisting the leaves and, lastly, firing them to halt the drying. Oolongs are widely consumed throughout Southeastern Asia and are prized for their complexity of taste and for their health attributes.
Our Oolongs come from Fujian and Guangdong Provinces. Our suppliers are artisans creating unique flavors through processes of manufacturing that have been practiced within their families for generations and, often, are unique to their area. Our Phoenix Bird Collection Oolongs offer an amber cup with colors and notes of fruit and honey. From Anxi Region, our Monkey Picked and Anxi Select Oolongs and our Snow Pear are greener in leaf, offering floral aromas and lighter golden-green infusions.
