Handmade, his harvest totaled 3 kilos.  Painstakingly gathered from old Oolong tea trees and processed using a small wood-fired oven, these elegant red-brown leaves offer a taste of one of China's finest oolongs and a glimpse into a fading craft.  Lot # Teacher's No. 1.  

Why we selected this lot.  The fact we were introduced to this tea maker and then had the honor to taste his oolong was enough to warrant a purchase.  Cupping tea in his home, we tasted teas that are ethereal in flavor.  Noted as well are the long and consistent shape of leaves generally one inch in length.  The tea maker has preserved the native flavors of the leaves and created a lot that is smooth in mouth feel and finish.

Interesting facts about this lot.  Teacher's “Old Tree” is made from tea bushes that have over time grown into trees.  Trees are located in the Phoenix Mountains and made by a retired school teacher/artisan tea maker.   Trees are estimated at 100+ years old and stand about 25 - 30 feet in height.  These trees are now demarcated as treasures by the local government. 

Taste profile.   The leaves taste of rich minerals and soft flowery notes. Charcoal-fired, there is also a slightly “peppery” note.  No sharp notes, it is tempered with time. 

Brewing suggestions. Using water at a temperature of 205 degrees F, rinse the leaves briefly to awaken them, then re-infuse and steep for 2-3 minutes.  We suggest a round teaspoon of leaf for 8-12 ounces of water.  Leaves will yield multiple steeps.
