With age, some teas get better. "White Empress" is made with Mei Zhan varietal leaves that have aged for 3 years. Given that this varietal grows slowly and at a comparatively high altitude, its taste is rich with the textures of a strong, sweet-side green tea but it has been processed as a white tea (note the leaves are natural in shape). This tea was harvested in the spring of 2012 and then allowed to "rest" in a controlled environment. This is a local custom of making tea based on aromas and tastes the folks who live in the area have come to appreciate. This is a tea that is rarely, if ever, exported and certainly not produced in large quantity.
Why we selected this particular lot. There is much to be said about finding local or fresh teas in China. They offer a glimpse into tea culture in China and bring new taste experiences to tea enthusiasts outside the country. One quickly notes the very pleasing appearance and healthy look of this tea. It colors are rich and deep. Despite 3 years of aging, it appears fresh and vibrant. Once tasted, we took the offer and purchased the tea. This is a signature lot, offering a unique taste of the season.
Tasting notes. Highly aromatic leaves. This tea offers a depth of taste and flavor that is unusually complex. Aging the leaves has matured the leaves and rounded its strong flavors. It will remind one of white tea but goes well beyond as the leaves open and release flavors that begin to resemble green tea. Again, this lot was made in 2013 and released in the spring of 2015 and it offers nuances on white and green teas well worth exploring.
Brewing suggestions. We recommend 3 grams of leaf for 8-12 ounces of water at a temperature of 195 F. The leaves are strong, aged and will release their flavors slowly so use a steep time of about 2.5 to 3 minutes. Experiment with the steep time and see where you most enjoy the flavors of this wonderful fresh tea.
