White Peony (Bai Mu Dan) - traditional style
White tea, in this case White Peony (Bai Mu Dan) is perhaps the most natural of teas (except for the traditional sun-dried teas of Xishuangbanna). The finest whites are arguably grown and processed in Fujian Province although other provinces produce wonderful tasting whites as well. Our White Peony offering does have a specific geographic place or origination and a terroir that create its striking appearance and flavors. Made with unopened buds and fresh leaves ranging in color from light green to dark brown, the lot we are offering was grown and produced in Fuding County in Fujian Province. The plant varietal is Fuding Da Bai (Big White). The leaves are slightly oxidized (8-16%) due to the air-drying process it goes through. Bai Mu Dan is processed by withering in a warm room on bamboo racks, then heat dried.
Why we selected this particular lot:
Our lot is an early-pick, "before the rain" as it was picked and processed in the first week of April 2016. The first whites tend to be smaller leaf and mote to the green side in coloration. This lot of Bai Mu Dan is made in the conventional or traditional style of farming and processing. Toward this, we look for a lot that has a mix of silver buds, shades of green and perhaps more brown leaf which is mote to conventional style. This mix should offer a "rounder" mouth feel. As the weather was warming quickly, this lot had the flavor and intensity of an early pick with enough leaf size and variation to offer complexity too.
Steeps to yield a clear, straw-like liquor with tastes of melon, grape and herbs. Tea has a nuanced flavor, decidedly sweet, with a "round", smooth mouth feel that will linger and satisfy. This lot has an abundance of buds, contributing to its rich, consistent flavor. This tea pairs very well with both savory and sweet foods.
Use 3-4 grams, a well-rounded tablespoon, per 8-12 ounces of water at 185-195 F for 2-3 minutes. Will yield multiple steeps.
