White Spring Cake
Herbaceous, fruity and naturally sweet all come to mind in tasting this aged white tea cake. Using leaf grown at an elevation of 900 meters in the mountains (famous for varieties of white tea) along the coast of Fujian Province, this White Peony cake is pronounced in its flavors as the leaves and buds were harvested, processed and pressed early in the 2013 season and then stored to ripen. It is unusual to press early spring leaves into cakes but with the rising popularity of white tea in China, traditions are changing. The farm's blend and aging of the leaf has resulted in a distinct, nuanced taste that is both delicate and pleasing and it cups to a very refreshing tea. Cake is 375 grams.
