Yellow Fragrance "Huang Zhe Xiang" was made using oolong leaves harvested from trees. Planted many years ago, this varietal grows, in time, into a tree with deep reaching roots. Stonewalls create terraces on which the trees grow dotting the steep mountainside. Cooling evening temperatures follow hot, lightly humid days, a perfect environment for tea. The soils are rich red in color; fresh springs cut through subterranean channels to nourish the trees. Early to mid-May the harvest of these large leaves begins.
Why we selected this particular lot:
Just the appearance of the leaves will lead one to recognize this is an unusual tea. It is rare to find leaves of this size any longer in the tea produced in the very famous Fenghuang area. Its slight yellow coloration also indicates something special. We know the farmer and how carefully he processes his harvest. Upon tasting, it was apparent this is a classic oolong from the WuDong Mountain area. We purchased this tea over 14 years ago.
The taste is silky and sweet. The most evident nectar-like notes mix with a tangy note underneath creating a pleasing complexity in the mouth. The finish blends the two notes, creating a lingering finish that will persist and warm. This lot offers a distinctive, refreshing cup.
The leaves are strong in flavor. 3-5 grams should be plenty of leaf for 8-12 ounces of water. Use boiling water to rinse the leaves briefly, pour off and re-infuse for 1.5 minutes and taste. The first steep is known for aroma. The second steep is when the flavors begin to open. This tea will yield multiple steeps.
