Type: Green

Province: Anhui

Caffeine Level: Medium

Organic: Yes

Main Flavor Profile: Pungent green

Packaging: Loose leaf

This lot of organic Gunpowder is a loosely-rolled with a bright, green-side leaf. Made with the same harvest period leaves as used for tightly rolled Pinhead and medium rolled versions, this lot uses a larger leaf and is processed in a more “loose” style which brings forth a milder aroma and flavor. Made in Anhui Province, this Gunpowder has body; producing a dark green cup with a slightly pungent and, if steeped long, an increasingly astringent flavor.

Lot Notes. Anhui has always been known for pungent, strong Gunpowders. The lot we offer is not tighly rolled. Plenty of flavor!

Tea Facts. The Chinese call this tea Zhu Cha or pearl tea. It is considered due to its rolled leaves to be the best at "keeping quality". Made from medium sized leaves grown organically. Tea was harvested in 2024.

Tasting Notes. This lot will taste smoother and a bit less pungent than many Gunpowders. The natural astringency of this tea is slow to come up due to the loose roll of the leaves.

Brewing Suggestions. A level teaspoon or 3 grams of leaf is a good amount for 6-8 ounces of water. Use water at 185-195 F., steeping the leaves for 2-3 minutes. A shorter steep time will keep the natural astringency of this green lower. The leaves will steep 2-3 times.

Full-leaf green teas will open to layered, delicate flavors. The freshly picked leaves are dehydrated to prevent oxidization and preserve their natural green color. Japanese green teas are steamed to preserve their fresh aromas and flavor notes. It is best if green tea is not brewed with boiling water.

Lower temperature water allows the leaves to steep slowly, preserving their natural sweetness. Green teas and yellow teas offer a gentle vegetal aroma. In the mouth, flavors range from spring asparagus and delicate notes of sorrel and raw vegetables to herbaceous and nutty.
