Our Sencha is organic, the leaves are long and a rich, emerald green color flecked with shades of lighter green. Taste is slightly astringent and produces a yellow liquor. Ours is grown in Fujian Province in the Japanese style. Processing of the leaf is done through a series of steams and drying to shape the leaf. The yellow infusion offers a robust and grassy taste. Sencha should be brewed carefully with water that is not too hot.

3 grams/1 teaspoon per 6 ounces of water

170° - 195° F

Full-leaf green teas will open to layered, delicate flavors. The freshly picked leaves are dehydrated to prevent oxidization and preserve their natural green color. Japanese green teas are steamed to preserve their fresh aromas and flavor notes. It is best if green tea is not brewed with boiling water.

Lower temperature water allows the leaves to steep slowly, preserving their natural sweetness. Green teas and yellow teas offer a gentle vegetal aroma. In the mouth, flavors range from spring asparagus and delicate notes of sorrel and raw vegetables to herbaceous and nutty.

    Tasty grassy sencha

    I am a huge sencha fan and when i read the other reviews for this tea, I was crushed. I ordered it anyway and initial brew was disappointed - it was light and I walked away. But a few minutes later I saw it on the counter, had another sip and it was PERFECTION. So maybe it needs to be brewed a bit longer but is as fine a Sencha as they come. I'm happy that it only has a few stars. I'll order it all!

    I've been drinking Senha for awhile now . My recent order was very disappointing. Not much taste or strength. Very disappointed ..is it old stock?

    Perhaps I am not being "open"- but this is very different than what I think of as Sencha. It is not at all grassy or vegital, without that deep umami notes that I love in Sencha. A drinkable everyday tea, but not what I was hoping for..
