A moment of spring captured in your cup. Bi Luo Chun, or “Green Snail Spring,” is a delicate specialty of Jiangsu Province, prized for its freshness, fragrance, and elegant appearance. The first taste of the season is especially rewarding. The lot we selected displays visible “pekoe” on its graceful leaves, denoting a Mao Feng, or fine-pick, standard.

  • Our lot of Green Snail Spring is composed of delicate curled buds and fuzzy, tightly coiled leaves. Note the tiny “tail” at the end of the spiral, a distinctive characteristic of the subvariety used for this tea.
  • The aroma is soft and mild, while the cup is clean, assertive, and thirst-quenching with delicate floral and fruity notes.
  • This tea rewards careful brewing and patience with a remarkably nuanced and memorable cup.

Full-leaf green teas will open to layered, delicate flavors. The freshly picked leaves are dehydrated to prevent oxidization and preserve their natural green color. Japanese green teas are steamed to preserve their fresh aromas and flavor notes. It is best if green tea is not brewed with boiling water.

Lower temperature water allows the leaves to steep slowly, preserving their natural sweetness. Green teas and yellow teas offer a gentle vegetal aroma. In the mouth, flavors range from spring asparagus and delicate notes of sorrel and raw vegetables to herbaceous and nutty.
